Chewy chocolate chip cookies — makes 12

One bowl, crisp edges, soft centers. Makes about 12 cookies.

Heat the oven and line the tray Heat to 180°C / 350°F. Line one baking sheet with parchment paper.

Mix butter and sugars Stir 115 g melted butter with 100 g brown sugar and 50 g white sugar until glossy.

Add the egg and vanilla Mix in 1 egg and 1 teaspoon vanilla until the batter looks smooth.

Fold in the dry ingredients Add 160 g flour, ½ teaspoon baking soda, and ¼ teaspoon salt. Stop as soon as no dry flour remains.

Add chocolate and chill Fold in 150 g chocolate chips. Chill the dough for 20 minutes so the cookies spread less.

Bake until the edges set Scoop 12 mounds with room between them. Bake 10–12 minutes; the centers should still look soft. Cool on the tray for 10 minutes.
⚠️ Hot sugar stays hot — Use oven mitts and leave the cookies on the tray before moving them. Melted chocolate can burn.
